For the simplest of summer desserts you just can’t beat posset. It is a silky smooth and creamy dessert flavoured with citrus juice which helps to set the posset into a wonderfully spoonable mixture.
What is so good, apart from such a wonderful texture and flavour, is that it takes very few ingredients and virtually no time at all to prepare.
Cream, sugar, tangerine juice and zest are all that are needed for this particular version.
The process is simple too. Simply heat the sugar, zest and cream to boiling point, then simmer for a few minutes. Add the tangerine juice and stir. Strain out the zest if desired and then simply pour the posset into serving glasses or dishes. It is a very rich dessert, so small portions are good. Allow the posset to cool and chill in the fridge until well set.

I like to serve posset with small shortbread biscuits.
My Posset
As mentioned above it took very little time to make. I simply brought the cream, sugar and zest to a boil. Then I simmered it for 3 minutes. I took it off the heat and poured in the tangerine juice and stirred that around.
I passed my posset through a strainer to remove the zest, but it can be left in too.
Then I decanted the mixture into serving glasses. I allowed them to cool and then covered them with plastic wrap and placed in the fridge until they were fully set.
I did sample a small extra dish before it was completely set and the taste was fantastic. Such a rich and creamy texture with the sweet and fruity flavour. This is simple the easiest dessert you can make for a hot summer day.

Tangerine Posset – Easy Summer Dessert

600ml(2 1/2 cups) double cream
150g(3/4 cup) caster sugar
100ml(1/3 cup + 4 tsp) tangerine juice
grated zest of 2 tangerines
Directions
- Place the sugar, cream and zest into a saucepan and bring to the boil, stirring constantly.
- When the mixture starts to boil reduce the heat and simmer for 3 minutes.
- Remove the mixture from the heat and stir in the tangerine juice.
- Pass the posset through a strainer if you wish to removed the zest.
- Pour the mixture into serving glasses and allow to cool.
- Cover with plastic wrap and place in the fridge until fully set, this can take 2 to 3 hours for a perfect set.
