Apple Butter & Walnut Bread is a quick bread. Clearly, from the title, it uses apple butter. However apple sauce can be used instead. Apple butter is a concentrated form of apple sauce that has also been spiced.
So, if using apple sauce for this recipe rather more spices might be needed compared to using apple butter. In the ingredients list, below, I give amount that would be good if using apple sauce. They can be adjusted to taste, particularly if using apple butter which already is heavily spiced.
If using apple sauce I would suggest, if possible, to use an unsweetened version. However that is not mandatory.
I made a large batch of apple butter a few weeks ago, so that is what I used.
As mentioned in the title, this quick bread has walnuts in which provide an extra flavour and a nice crunch too. In addition to that oats are included too. They offer more flavour and texture too.

Quick & Easy
As with all, or at least most, quick breads this is a very easy recipe. It takes very little time to prepare. Then it just needs to bake, for about an hour, and cool before serving.
The wet ingredients, except the apple butter, are mixed together. Then the dry ingredients are mixed together too. Wet and dry are then combined and the oats, walnuts and apple butter are folded into the batter. That is all that needs to be done. Then the mixture goes into the loaf tin to be baked.
My Bake

My Apple Butter & Walnut Bread baked very well. I tested it, with a skewer, after 55 minutes. There were some wet crumbs on the skewer so I left the quick bread in the oven for a further 5 minutes. Then I tested again, and the skewer came out clean.
I removed the pan from the oven and cooled the quick bread in it, for 20 minutes. Then I removed it from the pan and placed it on a wire rack to cool completely.
It sliced very well and looked very good. The taste was great, as was the texture. The flavour of the apple and spices worked well together and the crunch from the walnuts added something extra too.
This is perfect with some butter spread on it. I also think it can be used as a dessert, perhaps with some cream or custard, or a sauce of choice.

180g(1 cup + 3 Tbsp, based on scooping packed flour into a 250ml cup) plain flour
200g(1 cup) caster sugar
120ml(1/2 cup) vegetable oil
2 medium eggs(large in USA)
7.5ml(1 1/2 tsp) vanilla extract
1g(1/4 tsp) baking powder
3g(1/2 tsp) baking soda
5g(1 1/2 tsp) ground cinnamon(adjust to personal preference)
1/4g(1/2 tsp) allspice(adjust to personal preference)
.75g(1/4 tsp) ground nutmeg(adjust to personal preference)
3g(1/2 tsp) salt
45g(1/2 cup) oats
55g(1/2 cup) roughly chopped walnuts
190g(3/4 cup) apple butter, or apple sauce
Directions
- Preheat the oven to 180C/160C fan/350F.
- Grease a 2lb/900g loaf pan and line it with parchment paper
- In a large bowl mix the eggs, sugar, vanilla extract and oil together until fully combined.
- In a separate bowl mix the flour, spices, salt, baking soda and baking powder together.
- Tip that flour mix into the wet mixture and fold in until fully combined.
- Add the walnuts, oats and apple butter and fold in until everything is combined.
- Pour the mixture into the prepared loaf pan, and level it off.
- Place the pan into the oven and bake for 55 to 60 minutes, until it has risen and browned and a skewer poked into the centre comes out clean.
- Remove from the oven and cool in the pan before transferring to a wire rack to cool completely.
