Pecan Muffins – Quick & Easy

This simple recipe, Pecan Muffins – Quick & Easy is exactly those things. It is both quick and easy. As with most, if not all, muffin recipes the dry ingredients are mixed and then the wet ingredients are added. It’s really just as simple as that.

I had intended to post a different recipe, but things didn’t work out as planned. I did bake something that was very tasty indeed. However the presentation wasn’t how I wanted it, so that recipe needs some extra work. I therefore quickly came up with this easy recipe as a substitute.

So, an easy recipe with only a few steps. Let’s first consider the ingredients.

Pecan Muffins

Ingredients

Plain Flour – All purpose flour is good too. Also a combination of plain and cake flours is fine.

Baking Powder – This is the main raising agent for the muffins.

Ground Cinnamon – For some extra flavour. Other spices such as cardamom will also work well. I use Ceylon Cinnamon which has a wonderful flavour

Light Brown Sugar – has a subtle caramel flavour but caster or granulated sugar will also be fine.

Melted Unsalted Butter – A flavourless oil is a good substitute. Salted butter is fine too, but you can then reduce the amount of salt in the recipe.

Medium Eggs – In the USA this would be large eggs. Eggs are for binding and rising.

Salt – To draw out the flavours of the other ingredients.

Chopped Pecans – You can hold some back to sprinkle on the top, if you wish.

Milk – Is the main liquid for the recipe. However you can substitute with buttermilk.

As you can see the ingredients are quite basic. You can introduce different spices, or nuts, or even some other flavours/textures and still have very good results.

The process too is very simple, and takes very little time.

Process for Pecan Muffins

The beauty of muffins is just how easy they are to make. The preparation takes very little time. Baking too is quite fast. So you can have freshly baked muffins in less than an hour.

Mix the flour, salt, cinnamon and sugar together. Then mix the milk, eggs and butter together. Mix the wet into the dry, until just about comined. The stir in chopped pecans, holding some back for the top.

Spoon the mixture equally into a 12 hole muffin pan, either lined with cases or greased and floured. Sprinkle the remaining pecan pieces on the tops. Then bake the muffins for 20 to 25 minutes.

My Bake

I let my muffins bake for 20 minutes, by which time they were well risen. They took of a nice golden brown colour too. After testing them with a skewer, which came out clean, I let the muffins cool on a wire rack.

Then I tasted one. The texture was quite dense, just as i like muffins to be. The cinnamon gave a subtle spice flavour to complement the crunch of the pecans. These are very simple muffins that work so well for snacking, breakfast etc.

Ingredients

  • 350g(2 1/3 cups, based on scooping packed flour into a 250ml cup) plain flour

  • 100g(1/2 cup) light brown sugar

  • 8g(2 tsp) baking powder

  • 2g(1 tsp) ground cinnamon

  • 3g(1/2 tsp) salt

  • 240ml(1 cup) milk

  • 50g(3 1/2 tbsp) melted unsalted butter

  • 2 medium eggs(large in USA)

  • 100g(1 cup) chopped pecans – divided 75/25

Directions

  • Preheat the oven to 200/180C Fan/390F.
  • Line a 12 hole muffin pan with paper cases, or grease and flour the cups.
  • In a large bowl mix the flour, salt, cinnamon and sugar together, then set aside.
  • Mix the milk, eggs and butter together.
  • Pour that into the flour mixture and stir until just about combined.
  • Gently stir in 75g(3/4 cup) of the chopped pecans, until mixed through.
  • Divide the mixture equally into the paper cases, filling them about 3/4 full.
  • Sprinkle the remaining pecans on the top.
  • Bake the muffins for 20 to 25 minutes, until the muffins are well risen and have turned a golden brown.
  • Leave them in the pan for 2 minutes then transfer to wire rack to cool completely.
