Chocolate Chip Strawberry Shortcake is such an easy recipe. Not only is it easy but it is delicious too. Shortcake is similar to the British style of scone and it is perfect to fill with fruits and cream as a dessert.

For these particular shortcakes I use some chocolate chips to add a little extra to what is already a wonderful dessert.

The ingredients are fairly basic so I wont go into too much detail here. Except to say if you don’t have buttermilk you can make a good substitute. That is to mix 2 teaspoons of lemon juice or white vinegar into the same amount of milk. Then, after stirring, leave it to sit for a few minutes to curdle. Remove two teaspoons and discard them to get back to the 160ml required for the recipe.

Other than that, flour sugar, baking powder, baking soda, salt and butter are the basics. Then some chocolate chips enhanced the shortcakes. Strawberries and cream are the final and most decadent addition to the shortcakes.

With such a simple recipe the process is easy. Macerate about 1/2 the strawberries in a little sugar. The prepare the shortcake dough by mixing the dry ingredients together. Put the chocolate chips in too. Mini chocolate chips would be very good. But any will be fine. Add in the buttermilk and melted butter. Stir everything together until a dough forms.

Divide the dough into 8 pieces and form each into a disc. That is the number I recommend. However you can make larger ones if you prefer. Brush a little cream or milk on the top of each if you wish. Then bake the shortcakes a preheated oven at 220C/200C Fan/450F for between 12 and 15 minutes, depending how well done you want them.

Cool the shortcakes. Then whip the cream with a little sugar until it achieves stiff peaks. Set aside 8 pieces of strawberry for the tops. Stir the remaining strawberries into the macerated strawberries.

Slice the shortcakes in half. Spoon, or pipe, cream onto the bottom half of each one. Add strawberries onto the cream. Then add a little more cream on top, to help stick the top of the shortcake. Place the tops of the shortcakes on the cream. Add a small amount of cream on the top and place a piece of strawberry on that.

Chill the shortcakes until you are ready to serve them.

I let my shortcakes bake for 15 minutes. Rising well they took on a golden brown colour. I took them out oven and let them cool.

I whipped my cream to still peaks. Then I stirred my strawberries together. After slicing the shortcakes in half I filled them with the cream and strawberries, topping with a little cream and a piece of strawberry. However I think you could easily stir the strawberries into the cream before filling, if you wish.

I then had a taste. The crumbly shortcake was perfect with the chocolate chips. Then that wonderful combination of strawberries and cream completed a perfect summer dessert.

  • 450g(1lb) strawberries, hulled and quartered

  • 300g(2 cups, based on scooping packed flour into a 250ml cup) plain flour

  • 100g(1/2 cup) caster sugar, divided into 50g(4 tbsp) and 2 times 25g(2 tbsp)

  • 8g(2 tsp) baking powder

  • 4g(1 tsp) baking soda

  • 1.5g(1/4 tsp)salt

  • 160ml(2/3 cup) buttermilk

  • 60g(1/4 cup + 1 tsp) unsalted butter, melted

  • 85g(1/2 cup) chocolate chips

  • 480ml(2 cups) double cream


  • Preheat the oven to 220C/200C Fan/450F.
  • Line a couple of baking trays with parchment paper, or silicone mats.
  • Divide the strawberries in half and stir 25g of sugar into one half.
  • In a large bowl place the flour, 50g(1/4 cup) caster sugar, baking powder, baking soda and salt the stir together.
  • Stir in the chocolate chips.
  • Add the buttermilk and melted butter and stir until all is combined into a dough.
  • Divide the dough into 8 equal pieces.
  • Form each piece of dough into a disc and place on a baking tray.
  • Brush the tops with a little milk or cream if you wish. Make sure it is only the tops, not the sides.
  • Bake the shortcakes for 12 to 15 minutes, depending on how well baked you want them.
  • Allow the shortcakes to cool on a rack then carefully slice them in half.
  • Set aside 8 pieces of strawberry.
  • Whip the double cream with 25g(2 tbsp) sugar until it achieves stiff peaks.
  • Stir the remaining strawberries into the macerated ones.
  • Spoon, or pipe, some cream onto the bases of each shortcake.
  • Top the cream with strawberries, then a little more cream.
  • Cover them with the shortcake tops.
  • Place a little more cream on the top and press a piece of strawberry into it.
  • Chill until ready to serve.
