It’s always good to have a recipe like Pecan Cookies – Quick & Easy on hand. They take very little time to prepare and even less time to bake. The reward is a lovely cookie, or biscuit, that can be enjoyed at any time.
Jump to RecipeThe star of this particular show is pecans, and lots of them. Together with a little vanilla extract and a combination of butter and two sugars they have a great flavour.
The combination of a crisp exterior and a soft, or tender, interior they are just perfect for snacking. Varying the bake time will also adjust how soft they are on the inside. That is a matter of personal preference.

Ingredients For Pecan Cookies
As you might expect for such a simple to make cookie there are not too many ingredients.
Flour – Plain or all purpose flour.
Sugar – two types of sugar, light brown and caster, give the sweetness and some of the flavour. You can use all caster sugar, or even granulated sugar if you wish.
Butter – Unsalted butter, melted. You can use salted butter, but if you do then you can omit the salt from the recipe.
Vanilla Extract – for flavour.
Salt – To draw out the other flavours.
Pecans – Chopped pecans are the main ingredient, giving lots of texture and flavour.

Process For Pecan Cookies
The process is so simple and it can be done by hand or with a mixer of some sort. It starts with preheating the oven to 190C/170C Fan/375F, and lining a couple of baking trays with parchment paper or silicone mats.
Then all the dry ingredients apart from the pecans, so flour, salt and sugars go into a bowl and you mix them together.
Add it the butter and vanilla extract and mix again until everything forms a crumbly mixture. Then put the pecans in and stir again to mix through.
Take heaped tablespoons of the mixture, which should weigh about 22 to 23g, and squeeze it together in your hand unti it starts to meld together. Form the melded portions into balls and place them on the baking trays.
Bake the cookies for 10 to 12 minutes, until they are nicely baked through. Leave them to firm up, on the baking trays for a few minutes. Then transfer to a wire rack to cool completely.
What could be simpler? Just remember that the mixture will be crumbly so you need to squeeze each portion in your hand until it becomes a single mass.

My Cookies
I baked my cookies for 12 minutes and the looked fine. So I left them for a while as they became firm enough to transfer to a rack for cooling.
Then I dusted a little icing sugar over the top, which is entirely optional. I was then ready to sample a cookie. The taste was great, sweet and nutty and with such a good texture. The crisp outside and slightly softer inside was very good indeed.
Baking for a shorter time, maybe just 10 minutes will give a softer interior, if that is something you might prefer.
These are such easy cookies to make that they are now a firm favourite of mine.
